Serves 4

Ingredients

450g frozen petit pois or garden peas
6 spring onions/scallions, finely sliced
Small bunch of mint, finely chopped
Zest of 1 lime
Juice of ¼ lemon
2 tbsp virgin olive oil
75g feta cheese
Freshly ground black pepper

Method

1. Bring a medium pan of water to the boil. Throw in the peas and let them cook for about 4 min, drain in a colander and place under cold running water (this helps them to keep their bright green colour).

2. Put the drained peas in a bowl along with the spring onions/scallions, mint, lime zest, lemon juice and olive oil. Crumble in the feta cheese, season with pepper and toss.
