Macerated Prunes in Armagnac

This will make enough for the ice-cream recipe above, but the prunes are so good, it is worth doubling quantities and keeping in a screw-top jar until required.

125g Agen (semi-dried) prunes
125ml armagnac
2 tbsp water
3 tbsp sugar
Seeds from 1 vanilla pod

1 Pit the prunes and cut into small pieces. Place in small saucepan with the armagnac, water, sugar and vanilla seeds.

2 Bring to the boil and then remove from the heat and leave to steep for 24 hours.
