Chef Danni Barry of EIPIC in Belfast joins other top teachers and industry experts for Dublin Cookery School’s full-time three-month certificate course, starting in early January. This intensive, hands-on course is for those who want a career in the food industry, or avid cooks in general. 24 is the max class size, you’ll cook at pop-ups and get to apply for a ‘stage’ in a top restaurant. It runs from January 2 to March 24 and costs €8,590.

Dublin’s Westbury hotel and Boodles have teamed together to make a cocktail — the pink diamond — inspired by the Australian Rio Tinto mine that the jeweller is partnered with, and the gems it selects annually. It’s a concoction of Blackwater strawberry gin with Dolin Chamberyzette and Dom Pérignon, topped with lemon juice, fresh strawberry and basil. Would-be diamond-diggers should note: this drink contains no actual rocks. It costs €22.

The Shelbourne has a special Sunday spa package, aimed at kick-starting a detox for the week ahead. After an Elemis Superfood Pro-Radiance facial, stay Sunday night in a deluxe room, with dinner in the Saddle Room restaurant and breakfast on Monday morning. You can also make full use of the health club. The spa package costs from €399 per room (including two facials) and is available until the end of March. If you’d rather not stay over, the 60-minute facial on its own costs €120.
