Hot slaw

The original version of coleslaw, as described to wartime housewives in the Ambrose Heath book Vegetables for Victory

Ingredients
Half a raw cabbage
2 egg yolks
Butter or margarine
Vinegar
Salt

Method
This queer American dish is made with raw cabbage, but it needs two egg yolks. Shred and drain half a faw cabbage. Mix together in a double saucepan two slightly beaten egg yolks, half a teacupful of cold water, three level teaspoonfuls of margarine or butter, half a teacupful of vinegar and half a level teaspoonful of salt, and stir continually until the mixture thickens. Then add the shredded cabbage, and serve when it is heated through.
