Home made lemonade

This must be the most refreshing drink in the world. Take it on a picnic with a bottle of icy-cold soda water or drink it at home with plenty of ice (and a dash of vodka).

100g caster sugar
150ml water
2 lemons, scrubbed

Method

Combine sugar, water and the grated zest of a lemon in a saucepan and bring to the boil, stirring until the sugar is dissolved. Squeeze the lemons until you have 100ml juice. Add to the pan and leave to cool, then taste again.

Strain through a coarse strainer and store in a screwcap or corkable bottle in the fridge. To serve, add sparkling water or soda water to taste, eg, one part lemon syrup to two parts water.
