Sir, The discussion of the taste of tea (letters, Sept 4 and 11) fails to mention a main ingredient — water. The hardness, or otherwise, releases certain undesirable tannins. Quality teas dislike soft water, although some tea-drinkers believe that the harsh flavour saves money.

The taste, therefore, varies with where you live, and drinkers should check with bottled water before leaping to a conclusion.
