Garlic pork

Ingredients


120g garlic cloves, peeled
2tbsp thyme leaves
2 onions, chopped
1 habanero pepper, seeds removed, chopped
2tsp salt
Juice of 1 lime
500ml white vinegar
2kg boneless pork leg or shoulder in 3cm cubes
Vegetable oil for frying


METHOD


Combine all the ingredients except the pork and oil and pur?e in a blender in batches until smooth. Pour the mixture over the pork in a non-metallic bowl, cover and marinate in the fridge for at least two days and preferably a week. Drain the pork and pat it dry. Heat the oil in a frying pan and fry the pork cubes, a few at a time, turning often, until they are browned on all sides, about 5-7min. Drain the pork on paper towels and serve with a fruit salad and crusty bread.
