The traditional accompaniment to game is these wonderful “crisp” potatoes. You will need a mandolin to get the potatoes nice and fine. Use a potato such as Maris Piper or Desiree for best results. If you want to cheat, buy a good unsalted potato crisp and heat at 200C/Gas 6 for 3-4 minutes and then sprinkle with a little sea salt.

500g potatoes, peeled
Vegetable oil to fry
Sea salt to taste

1. Heat the oil to 180C in a deep-fat fryer.
2. Finely slice the potatoes on to a plate lined with paper towel; it is better if you keep the potatoes dry for this so you need to work quickly to prevent the potatoes from discolouring.
3. Drop the potatoes into the oil one at a time and fry until lightly coloured. Remove with a slotted spoon and drain on paper towel.
4. Keep warm while you finish frying the remaining potato.
5. Sprinkle with sea salt and serve immediately.
