Five recipe ideas with fungi - from canapes to a classic sauce for steak

Canap?s
Chop some prosciutto, parsley and garlic very finely and bind with a little olive oil and a touch of cayenne pepper. Then clean the mushrooms, remove their stalks and stuff a little of the mix into each cavity. Bake on a tray in the oven at 200C/gas 6 for about 10-15 minutes, until hot.

Toasty snack
Saut? some chopped shallots and garlic in oil, add sliced mushrooms and cook briefly. Stir in some crème fraîche and cook over a low heat for about five minutes. Season, stir in plenty of chopped parsley and serve on toast.

Classic sauce with steak
Pan-fry two steaks to your liking, remove and rest. Add sliced mushrooms and finely chopped garlic to the pan. Cook for two minutes, add a small glass of white wine, bubble up to reduce, then add double cream and a teaspoon of mustard. Season and serve with the steaks.

Open omelette
Saut? bacon pieces and chopped mushrooms in a frying pan until the bacon is golden; scatter with chopped parsley. Add seasoned, beaten eggs and tilt the pan and move around until cooked underneath. Grate Parmesan cheese over the top and put under a hot grill until lightly set.

Clear soup
Simmer chicken stock in a pan and add finely sliced mushrooms, spring onions, ginger, baby spinach leaves, shredded cooked chicken and a generous dash of soy sauce. Cook until heated through. Serve in bowls with chopped coriander and chilli.
