James Bond (George Lazenby) smuggles himself into the Swiss clinic of Ernst Blofeld (Telly Savalas). Sitting down to a steak dinner, Bond finds the dining-room packed with young women who have come to the clinic to be cured of dietary allergies through hypnosis. But Bond soon deduces that Blofeld’s mind control has a far more sinister goal.

WHAT YOU NEED

500g sirloin steak

1tblsp pineapple chunks

150ml pineapple juice

50ml double cream

1tblsp schnapps

2tsp coarsely ground pepper

METHOD

Tenderise the steak with a mallet, rub in pepper and leave overnight. Seal steak briefly in a pan over high heat, then set aside. Pour pineapple juice and chunks into a pan and simmer until reduced by half. Very slowly add the cream, stirring thoroughly. When it is amalgamated, return steak to the pan and cook for 4 more minutes. Place the steak on a serving dish. Add the schnapps to the sauce, boil vigorously for 1 minute, then pour over the meat. Serves 2 with fried potatoes.
