Ingredients
4 small cucumbers or half a cucumber

1 tbsp salt
½ tsp sugar
2 tbsp white wine vinegar
1 tbsp chopped dill
Method
Use a mandoline or slicing attachment of your food processor to cut the cucumber very thinly (as if making crisps). Spread out in a basin, sprinkle with salt and leave for 20 min. Gather up, squeeze dry, pile into a clean tea towel and squeeze dry again. Dissolve the sugar in the wine vinegar, stir in the cucumber, then stir in the dill. Chill until required.
