Cold yoghurt mousse with redcurrants

Desserts generally contain a lot of calories, so don't eat them regularly, and certainly not during the serious weight-loss push of the diet - eat fresh fruit instead. However, these yoghurt mousses are low in calories, so you can have them as an occasional treat.

Serves 4

3 gelatine leaves

400ml greek yoghurt, 10% fat

100ml double cream

3 tbsp honey, plus extra to serve

200g redcurrants

Immerse the gelatine leaves in cold water and leave for about 5 minutes. Meanwhile, mix together the yoghurt, cream and honey in a bowl. Lift the gelatine out of the water and heat it gently in a small saucepan. Let it rest for 2 minutes, then slowly pour the gelatine into the yoghurt mix. Stir in half the redcurrants.

Pour into 4 serving glasses and set aside until the yoghurt starts to set, then put in the refrigerator for 4 hours before serving. Serve cold with a little more honey and the remaining fruit on top.
