Orchata is another example of exciting Mexican and Spanish influences finding their way into Arizona and other US states. It's such an exciting way of using rice, and is so delicious. You can also make a strawberry orchata by following the method below, leaving out the cinnamon and blitzing the rice, water and sugar with 400g hulled strawberries. Serve with cookies and it's very happy days.
Makes 4 large glasses
150g long-grain rice
1 litre whole milk

1 tsp ground cinnamon
4 tbsp soft brown sugar
1 or 2 cinnamon sticks
Boil the rice according to the packet instructions, then drain and run under cold water, so it cools down quickly. Pop it into a liquidiser with the milk, ground cinnamon and sugar. Whizz until smooth, then taste and add a bit more sugar until it's sweet enough for you. You may need to do this in 2 batches if your liquidiser isn't big enough.
Once it's lovely and silky, sieve it into a jug with a load of ice and discard any rice left behind. Snap your cinnamon sticks in half and pop these in. Sprinkle over a little more ground cinnamon and serve.
