The filet mignon is the tenderest cut of beef you can throw on the grill. It also is one of the leanest, so the biggest challenge is to keep it from drying out. The secret is to let it come to room temperature before it starts cooking and then cook it hot and fast. This is the perfect "romantic" steak and is perfect for those intimate, special occasions. Make sure the grill is as hot as it will go and I recommend cooking it to little more than medium-rare. 

When buying a Filet Mignon, start by talking to the butcher. I recommend a filet that is cut into a cube. This gives it size surfaces that can all hit the grill for a quick, hot sear. This is the secret to that crusty surface that will give this steak the texture it deserves. Each side should get about one minute of intense heat, and that should give you the perfect meal.
