It is so soft and delicious, I had to stop myself from eating the whole cake! 👇SAVE THIS VIDEO FOR THE RECIPE: Ingredients- Cake- 3 cups cake flour (not self-rising) 2 teaspoons baking powder 1 teaspoon fine table salt 1/2 cup full fat coconut milk (canned) 3/4 cup of buttermilk 2 teaspoons pure coconut extract 1 teaspoon pure vanilla extract 2 cups of sugar 1 1/2 sticks unsalted butter, softened 1/4 cup of vegetable oil or canola oil 1 cup chopped white chocolate or chips 3 eggs 2 egg whites Frosting- 1 stick of unsalted butter, room temperature 4 oz cream cheese Dash of fine table salt 1 teaspoon of lemon juice 1/2 cup of coconut milk (canned) 2 1/2 cups of confectioner’s sugar 1/2 teaspoon coconut extract 1/4 teaspoon pure vanilla extract Garnish- about 1.5-2 cups of sweetened shredded coconut for coating Steps 1. Preheat the oven to 325F. Spray a 12-cup bundt pan with nonstick spray heavily and dust with granulated sugar. Set aside. 2. In a bowl stir together the cake flour, salt and baking powder, set aside. 3. In another bowl stir together the buttermilk, coconut milk, 2 teaspoons fo coconut extract, 1 teaspoon of vanilla extract, set aside. 4. Using the paddle of a stand mixer or with electric hand beaters, be a the butter, oil and sugar until light and fluffy about 3 minutes. Add In the eggs and egg whites slowly until incorporated. scrape the sides of the bowl. Beat again for 2 minutes on high speed. 5. WIth the mixer on low speed add the dry mix and the coconut mixture in 3 installments until combined. Don’t over mix. Stir in the white chocolate chips. 6. Pour into the prepared pan and bake in the oven on the middle rack for about 55 minutes or until a toothpick comes out just clean. 7. Allow the cake to cool completely on a wire rack inside the pan before flipping. Make the frosting. I normally eat 2 pieces in one sitting, at the very minimum LOL. I personally loooove walnuts in mine, but if you aren’t into nuts exclude! It’s a recipe for everyone 😍 There are a few notes from him on the recipe and I’ll include those as well in the comments. Because trust me, you’re going to want to make this EXACTLY like Bill. INGREDIENTS: 1 2/3 cups all- purpose flour 1 tsp baking soda 1/2 tsp ground cinnamon 1/2 tsp kosher salt 1/2 cup white sugar 1/2 cup plus 2 tbsp brown sugar 2 eggs 1/2 cup avocado oil 3 1/2 very ripe bananas peeled and mashed (about 1 1/2 cups) 2 tbsp sour cream 1 tsp vanilla extract *Optional: 1 cup chopped walnuts split (3/4 cup is mixed in batter, 1/4 cup is sprinkled on top before baking) DIRECTIONS: With the rack in the center of the oven, preheat to 325°F. Lightly butter and flour pan(s) of choice. Sift together the flour, baking soda, cinnamon and salt in a bowl and set aside. With a stand mixer fitted with the whip attachment, beat together the sugar and eggs on medium speed until light and fluffy, about 5 minutes. Switch to low speed and slowly drizzle in the oil, taking your time. (You want to keep all the air you just beat into the mixture). Add the bananas, sour cream, and vanilla, and continue to mix on low speed just until combined. Use a rubber spatula to fold in the flour mixture thoroughly combined. No flour streaks should be visible. Using a spatula, mix in 3/4C of chopped walnuts Pour the batter into the prepared loaf pan(s) and bake for 1 to 1 1/4 hours for a 9×5-inch loaf, and about 50 minutes for three 6×3-inch loaves. The loaves should be golden brown on top and the cake will spring back when you press it. Let cool in the pan on a wire rack for 30 minutes, remove from the pan and let cool completely on the wire rack. So we’re resharing it and hope you love it as much as we do 😍 Palmier cookies are the definition of French, buttery taste 🧈 They’ve been some of our favorite cookies when we lived in Paris, so being able to make a fresh, warm batch at home is just ✨ Depending on where you’re from, you might also know them as elephant ears. In Germany, we call these piggy ears 🤭 To make these, you’ll need 👉 30-50g sugar, depending on how sweet you like it. We used a thin layer and it was delicious. For the best crunch, use a little more 👉 1 puff pastry dough (240g); shape it into a square it you can only find round ones 1. Sprinkle half the sugar in a flat surface and lay your dough on top. Then sprinkle the other half evenly on top. 2. Roll both sides in so they meet in the middle, and put your log in the fridge or freezer for a bit for easier cutting 3. Cut your log into thin slices and bake the cookies for 15 minutes at 180C (350F), turning them halfway through.
