250 grams gluten free Gnocchi 1 1/2 Taylors Gold Pears, peeled and diced 1/3 cup Red Onion julienned 1/2 cup toasted Walnuts (save a few for garnish) 1 Tbs Butter 1/4 cup crumbled Gorgonzola 1/2 cup grated Pecorino D.O.P. 3/4 cup Heavy Cream Pinch of Salt and Pepper

Pear and Goat Ricotta Ravioli with Butter and Sage
Ingredients
● For the filling:
○ 3 pears
○ Salt
○ Nutmeg (a pinch)
○ ½ teaspoon sugar
○ 1 oz Gorgonzola (30 g)
○ 1 cup goat ricotta (250 g)

● For the pasta:
○ ¾ cup flour (100 g)
○ 3 egg yolks

● For the sauce:
○ 1 tablespoon butter (a pat)
○ 5 sage leaves
○ Ravioli cooking water
○ Black pepper
○ Grated Pecorino cheese

Instructions
Filling:
1. Slice the pears thinly, season with salt, add nutmeg and sugar, and let them dry for 15 minutes.
2. Mix the Gorgonzola with the goat ricotta.
3. Add the pears to the cheese mixture and place the filling in a piping bag.
