This beef stew recipe is a classic dish of fork tender beef stewed with carrots and potatoes, so much like my mother used to make, pure comfort food. Growing up, my mother made a lot of crockpot beef stew. It was my favorite dish she made, such a simple recipe, with cubed stew beef tossed into a crockpot with potatoes, carrots, some liquid and a pre-made beef stew seasoning packet.
