Earl grey lemon cake

A lovely three-tiered cake marrying the flavors of aromatic Earl Grey tea and bright lemon curd.

A friend needed help with an earl grey flavoured cake so I made a test cake to see how it'll turn out. Well it was supposed to be a test cake but somehow I ended up making a stacked 9 inch cake, which involved tripling the recipe (now that's a lot of cake batter and frosting).

Topped with a homemade Earl Grey glaze, this loaf cake is one of my favorites! The mix of lemon and Earl Grey works beautifully, and it's delicious served as dessert or even breakfast.

This cake is a basic vanilla cake but with all the additions of Earl Grey flavour that you can think of. The milk that is used in the batter is steeped in earl grey, there are tea leaves directly in the batter, then I drizzle an Earl Grey syrup over the cakes, and lastly, the icing has a bit more of that earl grey milk just to finish it off. So if you're a tea lover, this one is for you!
