I’m reposting this because it’s easily one of my favourite single serve meal prep recipes and I know a lot of you probably haven’t even tried it yet!! Definitely give it a go and let me know what you think 🙌🏼

Ingredients (for one serve):
50g x raw basmati rice 🍚 
150g x lean boneless chicken breast (diced)
1/2 cup x diced capsicums 🫑 
1/4 cup x diced red onions 🧅 
1/4 packet x fajita seasoning 
100ml x chicken stock
20g x shredded mozzarella cheese 🧀 

Optional toppings when serving:

Nandos perinaise sauce 

Method:
Preheat the oven to 180 Degrees Celsius.
