2 racks (about 5-5-1/2 pounds) pork ribs cut into 4-5 “racks”
Kosher salt
   The rub:
1/2-cup dark brown sugar
2 tablespoons Dijon mustard
2 tablespoons dry mustard
1 tablespoon dry ginger
½ teaspoon cloves
¼ cup kosher salt
   The sauce:
1-tablespoon sesame oil
8 large cloves garlic, sliced
2-tablespoons coriander seeds, lightly crushed
3/4-cup low sodium soy sauce
1-cup dark brown sugar
2-cups hoisin sauce
1-cup rice wine vinegar
1-1/4-cups apple cider vinegar + extra
1-1/2 cups Dijon mustard
2 tablespoons chili crunch
   Sticky glaze:
3/4-cup honey
½ cup apple cider vinegar

I’ve got a a Vietnamese Lemongrass marinated one, Filipino adobo ribs, and one I call “country glazed ribs” which has a nice shiny glaze (though admittedly similar to BBQ flavour) and Cajun style.
