Ingredients: 1 cup rice 1 can butter beans rinsed and drained 1 tbsp minced garlic 1 cup sliced italian olives 1 cup sliced cherry tomatoes 1 cup chopped sundried tomatoes 2 cups chopped spinach 1 10oz jar marinated artichoke hearts Parsley for garnish 1/2 lemon juiced 1/2 cup coconut milk 2.5-3 cups water 1 tsp salt 1/4 tsp pepper Garnish: vegan feta + parsley Mix all together in a casserole dish making sure the rice is covered well.
