BAKED ZUCCHINI CHIPS/FRIES 🍟
· 1 serving 𝙄𝙣𝙨𝙩𝙧𝙪𝙘𝙩𝙞𝙤𝙣𝙨 🔪 First, instead of bread, use freshly grated pecorino cheese (you can use parmesan). Add 1.5 cups to a bowl, then sprinkle on 1-2 tsp oregano and 1/2 tsp smoked paprika. Give it a mix with your hands and set it aside. Next, crack one or two eggs into a bowl, whisk, and set aside. Grab zucchini and cut into the desired shape - coins, sticks, wedges, your move. Then layout over a kitchen or paper towel and press down to absorb any excess moisture. When you’re ready, dip the zucchini in the egg wash using a fork, use your hands to cover it with the cheese and seasoning mixture, then lay it on an oven sheet over some parchment paper. Pop into a preheated oven (425F) for about 10 minutes before flipping over and cooking for another 4-5 mins.

50min · 8 servings Ingredients: For the Lasagna Roll Ring: • 1 box lasagna noodles, cooked • 1 1/2 pounds ground beef, mixed with sauce • Parmesan cheese • Parsley For the Ricotta Cream: • 1 1/2 cups ricotta cheese • 2 eggs • 1 package basil, chopped Instructions: For the Lasagna Roll Ring: • Preheat oven to 390ºF. • Cut half the lasagna noodles in half. In a Bundt pan, add a layer of uncut lasagna noodles so they drape out of the pan. Top with some meat sauce and a layer of cut noodles. Add dollops of ricotta cream and spread out evenly. Add another layer of noodles, followed by meat sauce. Top with a final layer of cut noodles, then wrap the draped noodles over the top. Cover with a lid and bake for 20 minutes. Cut into slices and sprinkle with parsley and Parmesan. Add
