Julius Roberts on Instagram: "Courgette, ricotta and basil tart. Super easy to make and absolutely delicious. Perfect recipe for this warm summer sun! It’s light and zingy, great with a green salad, some cheese and prosciutto. Just make sure you slice the courgettes thin, and season the ricotta well. Using yellow and green makes it look very beautiful. I think thin disks placed like fish scales would look great too. Basil oil - is simply a big handful of basil pounded in the pestle and mortar with olive oil. Great way of quickly preserving some basil that’s going past its best. Cook at 220 degrees for about 20 minutes until golden and crisp."
