Cape Coral sandwich, hot dog restaurant closes less than six months after opening

Less than six months after opening, Bimini Bites Home of The Flying Dog in Cape Coral has closed.

In January, the gourmet hot dog and deli sandwich joint took over the spot previously occupied by Ice Sssscreamin’ on Cape Coral Parkway near Bimini Basin and Four Freedoms Park.

“You know what they say,�� a post on The Flying Dog’s Facebook page read, “you can’t keep a good dog down… (We’re) closing our Cape parkway location to satisfy your cravings where you want us most.”

Bimini Bites was a collaboration between Greg Ryng, who ran the sandwich half, and Colleen Brady who owns The Flying Dog food truck, which was parked but not operating at the Cape location.

Before opening, they spent the last two months of 2023 getting the spot at 520 Cape Coral Parkway E. ready to go.

“You wouldn’t recognize it,” Ryng said in January. "We painted, added lights, new planter boxes in the front. The inside is completely redone too.”

When it first opened, the fast-casual eatery served breakfast, lunch and dinner seven days a week.

“It fills a void for specialty food that’s hard to get in Cape Coral,” Ryng said just before the grand opening.

Besides specialty sandwiches, soup, salads, bagel and egg sandwiches and smash burgers were sold.

Brady’s Sabrett 100-percent beef hot dogs, including the Chicago, Carolina and Coney Island dogs, were a big draw.

The announced closing isn’t the last you’ll see of those hot dogs, though.

“Colleen and the team at The Flying Dog are shouting huge appreciation to our fans and friends in South Cape as we take flight to your favorite spots throughout Cape Coral and SW Florida,” the post read, announcing a few locations where the food truck would be that day. “It’s been an incredible journey and we can’t wait to serve you on the move.”

The Flying Dog food truck was parked, but not operating, at Bimini Bites.
