As the end of Ramadan is upon Muslims across the world, they'll be deciding on tasty delights to celebrate with - and this delicious Tandoori chicken is a real showstopper.

Eid al-Fitr is a vital moment for those observing Ramadan to celebrate and replenish - but with a huge focus on health, many Muslims will be looking for the food they're making to be as nutritious as possible.

Award-winning Muslim cookbook author and chef, Anisa Karolia, has seen a surge in interest in healthy Iftar recipes and is trying to mix things up to suit her community who want to approach their cooking in a different way.

Anisa has teamed up with Ninja to show how families can benefit from appliances like the Ninja Foodi FlexDrawer Dual Air Fryer 10.4L AF500, to reduce the amount of oil needed to create delicious meals. It can be purchased from Amazon, or Lakeland.

Speaking about the amazing-sounding Tandoori chicken recipe, Anisa said: "Within our community, we are starting to see more people become aware of the food they are eating during Ramadan, and how the more traditional recipes which require heavier amounts of oil are not as healthy as people want, with more people, particularly the younger generations, looking to reinvent these classic recipes in a more health-conscious way.

"Plus, with the AF500 you can choose to have 1 large cooking compartment, so I recommend cooking your meat directly on top of your veg and potatoes so the juices can seep down and season them as they cook."

Tandoori chicken ingredients

· 4 chicken fillets or thighs

· 4 tbsp creme fraiche

· 2 tbsp olive oil

· 2 tbsp fresh lemon juice

· 2 heaped tbsp tandoori paste

· 1 tsp black pepper

· 1 tsp hot paprika

· 1/2 tsp turmeric powder

· Salt to taste

· 2 tbsp fresh parsley, for garnish

Mediterranean vegetable ingredients

· 1 small courgette, sliced into 1/2" thick rounds

· Small pack of baby vine tomatoes

· 2 medium carrots, cut into chunks

· 1 red pepper, cut into chunks

· 1 green pepper cut into chunks

· 8 baby potatoes, halved

· 1 sweetcorn, cut into 3" rounds

· 2 tbsp olive oil

· 1 tsp mixed spice

· 1 tbsp honey

· 1 tbsp fresh garlic, chopped

· 1 tsp black pepper

· Salt to taste

Method

For the air fryer Tandoori chicken, in a bowl add creme fraiche, olive oil, black pepper, salt, hot paprika, turmeric powder, tandoori paste and lemon juice. Mix it all together and marinate the chicken. Leave in the fridge overnight or marinate for a few hours.

‌When it comes to the vegetables, steam the potatoes, carrots and sweetcorn, and add them to the rest of the vegetables. Add olive oil, black pepper, salt, mixed herbs, garlic and drizzle in the honey. Mix it all together. Then, place the vegetables in the flex drawer and place the chicken fillets on top.

‌Set your air fryer on the 'Roast' setting for 20 minutes, at 185 degrees, turning halfway through add in the baby vine tomatoes, and finish cooking. The chicken will be lightly charred and cooked through and smelling delicious. Serve the fillets over Mediterranean Vegetables and garnish with fresh parsley.
