Ingredients

  • 1 lbs Little Potatoes, diced
  • 1 small onion, diced
  • 2 carrots, peeled and diced
  • 1 stalk celery, diced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 6 oz ham, diced
  • 1 (15 oz) can corn, undrained
  • 2 cups chicken broth
  • 1 cup milk
  • 1/2 cup instant mashed potato flakes
  • (To taste) salt and pepper

Instructions

  • Step 1

    Dice little potatoes, onion, carrots, and celery.

  • Step 2

    Place diced vegetables into slow cooker along with minced garlic, diced ham, dried thyme, corn, and chicken broth.

  • Step 3

    Cover and cook on low for 8 to 10 hours.

  • Step 4

    Pour in milk.

  • Step 5

    Add instant mashed potato flakes. Start with one cup, stir, cover, and let sit for five minutes. If it’s not thick enough, slowly add in a little more. No more than two cups.

  • Step 6

    Allow the chowder to cook for an additional 20 minutes on low. Give it a taste and season with desired amount of salt and pepper.

  • Step 7

    Top each serving with shredded cheddar, cooked and crumbled bacon, and sliced green onions.
