Pizzas:

  • 1 lb Little Minis
  • 1 Tbsp olive oil
  • (To taste) salt and pepper
  • 1/4 cup marinara sauce
  • 44 slices pepperoni (or as many slices as potatoes)
  • 22 mini bocconcini, halved (you'll need 1/2 per potato)

Dipping Sauce:

  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 garlic clove, minced
  • 1 Tbsp fresh parsley, finely chopped

Instructions

  • Step 1

    Preheat oven to 400 °F.

  • Step 2

    In a bowl, toss Little Minis with olive oil, salt, and pepper until well coated. Transfer to a parchment paper lined baking sheet and bake for 15 minutes.

    Once cooked, flatten each potato with a slotted spatula or the bottom of a glass and top each potato with one teaspoon of marinara, one pepperoni, and a bocconcini half. Bake for an additional four minutes or until melted.

    Meanwhile, whisk together the sour cream, mayonnaise, garlic, parsley, salt, and pepper in a bowl until well-combined.
