  • 1.5 lbs Little Potatoes, quartered
  • 2 Tbsp olive oil
  • 1/2 cup olives, diced
  • 1/2 cup roasted red peppers, diced
  • 1/4 cup goat cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • (To taste) salt and pepper
