Ingredients

Potatoes:

  • 1.5 lbs Little Potatoes
  • 1 Tbsp olive oil
  • 1/4 tsp kosher salt
  • 1/8 tsp white pepper

Peanut Dip:

  • 1 cup peanut butter
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1/4 cup honey
  • 1 lime, juiced
  • 1 clove garlic
  • 1-inch piece ginger, grated
  • 1 tsp sambal or sriracha

Instructions

  • Step 1

    Preheat the oven to 450 °F. Pierce the potatoes with a fork twice each.

  • Step 2

    Microwave for seven minutes on high heat.

  • Step 3

    Using a slotted spatula, gently squish the potatoes to make them a little flat.

  • Step 4

    Gently toss potatoes in olive oil, salt, and pepper. Bake in the oven for 10 minutes, flipping halfway on a parchment lined baking sheet.

  • Step 5

    While potatoes are roasting, blend all of the ingredients for the peanut dip in a food processor.

  • Step 6

    Serve peanut dip on the side of the smashed potatoes and enjoy!
