Did you know today, April 16, is National Eggs Benedict Day? My favourite breakfast in the world is Egg's Benny. Anytime I go out for breakfast if this is on the menu you can bet I will be ordering it. "What is Egg's Benedict?" you ask. Eggs Benedict is a classic breakfast or brunch dish consisting of two halves of an English muffin, each topped with back bacon or ham, a poached egg, and hollandaise sauce. It's often served with a side of roasted potatoes or greens. As for its history, there are a few theories, but the most widely accepted one involves the story of a wealthy New York City stockbroker named Lemuel Benedict. According to legend, in the late 19th century, Benedict wandered into the Waldorf Hotel (now the Waldorf Astoria) in Manhattan, seeking a cure for his hangover. He ordered "buttered toast, poached eggs, crisp bacon, and a hooker of hollandaise" from the hotel’s restaurant. The legendary chef, Oscar Tschirky, or "Oscar of the Waldorf," was intrigued by Benedict's order and substituted English muffins and back bacon instead. He then included it on the menu, naming it "Eggs Benedict" after the customer. The best Egg's Benny I've ever had comes from a local brewery restaurant, Whitewater Brewing Company . If you're ever in the area, I suggest you visit them for something to eat. Amazing food.
