Interesting read on the evolving F&B trends! 🍕 🍛 🍩 Traditionally, Biryani has been the topper over last 8+ years as the most ordered dish in India. (Trivia: India ordered 2.5 biryanis per second in 2023. For every 5.5 chicken biryanis, there was one veg biryani ordered as per Swiggy's report.) Southern India usually remained the stronghold for the bulk of Biryani orders but Kolkata seems to be the new hub for Basmati delicacies. The shifting trend might also align with the fact that Bangalore sees most of the orders in Breakfast/Brunch slot (hence Masala dosa) while Delhi is transitioning into a snacks heavy region backed by rising GenZ population which leads to the rise of Quick food category. Is Domino’s Losing its Flavor in India?? 🍕 📉 The pizza landscape in India is changing, and Domino’s is feeling the heat. The net profit of Domino’s has fallen from ₹418 crores to ₹353crores, combined with a 𝟰𝟱% 𝗱𝗿𝗼𝗽 in stock price from its all-time high to ₹490. 👉 The reasons? Lack of innovation, subpar dining experience, and high prices amidst weak discretionary spending in India. Small players like Tossin Pizza, Mojo Pizza, and Ovenstory are nibbling away at the market share. Homegrown brands like La Pino’s Pizza are scaling rapidly, doubling their stores every three years. The Gen Z and Millennials are gravitating towards local players who offer better taste and quality at lower prices. For instance, in Mumbai, Joey’s Pizza, with its stellar 4.5-star rating, is the go-to choice for students and the young population. These brands are creating “fan clubs” with tight control on cost and targeted marketing spends. 📍 To counter this, Domino’s has slashed the prices of its large pizzas from ₹𝟵𝟭𝟵 𝘁𝗼 ₹𝟱𝟰𝟵 and launched a 𝟮𝟬-𝗺𝗶𝗻𝘂𝘁𝗲 𝗽𝗶𝘇𝘇𝗮 delivery in select metro areas. But it’s not just about price and delivery. The young population craves new tastes and photo-friendly places for their social media stories. We are planning to expand into the Darshini model, a South Indian concept of quick and affordable meals that’s popular in Bangalore, and hoping to bring it to Chennai. Rather concerning on the general choice of eating outside for Indians in India. Not unexpected but still remarkable insights on the how not withstanding ancient culture the global influence of cuisine impacts the quality of urbanized Indian palate: biryani and pizza in the same breath! A large factor is the convenience but question is how much is it because of the longer hours and convenience versus eating for entertainment. Would be interesting to know the breakdown. Being in Mumbai is chicken soup for my soul. On my last trip to the city, I tried to make the most of my short visit by meeting my competitor-turned-friend, Deepali. Like the excellent host she is, she treated me to General Mills India's latest innovation, Pillsbury Chicken Momos. Honestly, at first, I was a bit taken aback by the choice of the product launch by the company. But then my brain rationalized the launch. Pillsbury sells Atta, refines it further to make Maida, and that refined flour is used in making Momos. Simple forward integration of the product category. And also, of course, because the momo category in Frozen foods is on fire lately. One problem though. Pillsbury doesn't retail Maida. Neither do two of the other three biggies in the branded Atta category: ITC Limited and Cargill. Only Adani Wilmar Limited is an exception. I am certain a very sizeable number of Indian households, especially in the North, would have both Atta and Maida at home. The quantities would be poles apart though. The consumption divide is evident: while Atta might be between 5-10 kg, Maida won’t be more than 1 kg. While whole-wheat is a staple at home, Maida has disproportionately more usage in the industry. Bread has Maida, snacks have Maida, confectionery has Maida; and HoReCa—are you even a North Indian restaurant if you don't have at least five varieties of Naan on the menu? The more I thought, the more I realized that, for most Indians, Atta is 𝘨𝘩𝘢𝘳 𝘬𝘦 𝘭𝘪𝘺𝘦 and Maida 𝘣𝘢𝘢𝘩𝘢𝘳 𝘬𝘦 𝘭𝘪𝘺𝘦. This is reflected rather poetically when one notices Pillsbury has Maida products as part of its institutional Bakery and Food Services division. I doubt there is any other commodity whose processed form gets consumed at such a large scale. It reminds me of what YN Harari mentioned in Sapiens: "We did not domesticate wheat.
