What's your favorite way to use pecans? 🌰✨ During the recent Georgia Pecan Tour, Chef Scott Simpson crafted a masterpiece that left the other culinary pros in awe. We're excited to share his recipe for Cajun Sheet Pan Roasted Butternut, Sweet Onion & Georgia Pecans! 🍽️ Ingredients 2 butternut squash (approx. 1 lb each) 1 cup onion, finely chopped 3 small cloves garlic, minced ½ teaspoon Italian Herb Blend (Dried Parsley, Thyme, Rosemary) ½ teaspoon kosher salt, divided ½ teaspoon cajun spice blend (your favorite brand) ¼ cup pecan oil (Optional) ¾ cup small diced apple (Honeycrisp, Pink Lady, Gala, Fuji) ¼ cup chopped toasted Georgia Pecans 1 Tablespoon Louisiana Hot Sauce Kosher Salt & Cajun Spice, to taste 1. Preheat the oven to 350 degrees F. 2. Peel Squash. 3. Cut squash in half lengthwise; scoop out and discard seeds and stringy pulp. 4. Dice squash into medium dice. 5. Coat a rimmed baking sheet with cooking spray or cover with parchment paper. 6. Place the diced squash In a bowl and toss with onion, garlic, herbs, salt, Cajun Spice and Pecan Oil. Include apples, if desired. 7. Spread mixture in pan. Roast in oven until tender when pierced with a fork, about 15 minutes. 8. Remove from the oven and let cool for 5 minutes. 9. Place back in mixing bowl and season with toasted pecans, you can save some for garnish as well as some of the fresh herbs, if available. 10. Add Louisiana Hot Sauce 11. Season to taste. 12. Serve hot as a side soon after seasoned or can be made into a salad or even bruschetta topping to use later. Don’t sleep on this one! As the weather gets colder, there's nothing like a warm bowl of pumpkin soup to keep you cozy. Here's my favorite quick and yummy recipe: 👉 Cook Vegetables: In a large pot, heat the coconut oil over medium heat. Add the onion, garlic, and carrot. Sauté until the onion is translucent, about 5-7 minutes. 👉 Add Pumpkin and Spices: Add the pumpkin, cumin, cinnamon, and ginger. Cook for 5 minutes, stirring occasionally. 👉 Add Broth and Simmer: Pour in the broth, bring to a boil, then lower the heat. Cover and let simmer for about 20-25 minutes, or until the pumpkin is tender. 👉 Blend: Use an immersion blender to blend the soup until smooth. If you don't have one, you can blend in batches in a regular blender (be careful with hot liquids). 👉Add Coconut Milk and Serve: Stir in the coconut milk, then add salt and pepper to taste. Serve with a garnish of cilantro or parsley if you'd like. Enjoy this delicious pumpkin soup, it is perfect for chilly days! #pumpkinsoup #cozyfood #coldweathercomforts #soupweather

White Bean Purée 1 lb 500 g Cooked white beans, such as navy or cannellini 2 2 Garlic cloves, mashed to a paste 4 tsp 20 mL Tomato paste 1 fl oz 30 mL Lemon juice 4 tsp 20 mL Paprika 1⁄2 tsp, or to taste 2 mL Cayenne 4 fl oz 125 mL Water 4 fl oz 125 mL Olive oil to taste to taste Salt 1. Combine the beans, garlic, tomato paste, lemon juice, paprika, cayenne, and water in a food processor. Process to a smooth paste. 2. With the processor running, pour in the olive oil in a thin stream. 3. The resulting purée should have the consistency of a moderately thickened sauce. If it is too thick, mix in a little more water. 4. Season to taste with salt. #chefs #foods
