MAY 5 IS OYSTER DAY AROUND THE WORLD The online edition of the Italian magazine, Italia A Tavola https://lnkd.in/gq7WGA6J just published that May 5th is World Oyster’s Day. It is somewhat controversial because there is an old saying among old-school chefs like me that we should not consume oysters during the months that do not contain the letter “R.” After all, oysters reproduce during those months. The natural milky-like substance in females changes the taste of specific species of these bivalves because they are hermaphroditic (they produce both sperm and eggs). But we leave this up to the food scientists to decide. I am more interested in an open discussion about what wines could be paired with oysters besides the traditional Brut/ Dry Champagne or, for me, better yet, a Muscadet—Melon de Bourgogne grape, grown in the area around the port city of Nantes. Lately, however, I have experimented with preparing and pairing cold seafood, especially oysters, with Dry Gewürztraminer, Grüner Veltliner, and Viognier. The Dry Gewürztraminer from Gundlach Bundschu https://lnkd.in/ghyCKZfJ paired best, followed by a Hungarian Grüner Veltliner. What do you suggest pairing with oysters?

Lazio is a region rich in culture, history and wine making. Together with Donne del Vino, we synergized these characteristics and put a spotlight on our wines. Jacobini hit the mark: “Here we focus on the area also because the estate would like to create a product with all the nuances of the territory. The Jacobini IGT Lazio 2022 is certainly on the right track, a white wine that characterizes our territory with tropical hints, citrus flavor, flavor and balanced minerality, which savors the volcanic part.” https://lnkd.in/ddNVb-M6

Have you ever heard of Temporary wines? Andrea Moser, enologist behind this project, is introducing a different way to make wine, detaching from the traditional concept of terroir we got used to refer to. Grapes coming from different geographies will be vinified in different places shortlisted for their peculiarities and with different tecniques, adopting practices which enhance at the best both the character of that grape and the type of wine they wish to achieve. Limited editions made for few, to purchase on pre-booking (as it often happens for Bordeaux wines) and dispatched only during the coldest months to preserve their features. The first wine, FLOW, will be available in October 2023. A mix of traditional local white grapes from a 80 years old vineyard near Arezzo, Tuscany, abandoned several years ago because of the cold weather and today discovered ideal for viticulture. The human intervention has been minimal, letting the environment and the grapes dialog and create their own narrative. A mix of Trebbiano, Vermentino, Malvasia bianca, Canaiolo bianco and a 5% of other unidentified grapes. Only 726 bottle released after a maceration & fermentation in Clayver, followed by a passage in small Vin Santo barriques, and a long lees contact. Have you booked your bottle yet? 🥂 https://lnkd.in/djq9akhe

GREAT NEWS FOR THE ITALIAN PROSECCO PRODUCERS! Prosecco vs Prosek, the war is over: the European standard against shortcuts on geographical indications (GIs) is in force. The war may have started in 2021 with this headline: “Croatia wants Prosek and Veneto is furious: "Attack on Prosecco" Zagreb asks the EU Commission for the recognition of local wine. Undersecretary Centinaio: "Inadmissible proposal". Zaia's wrath: "Scandalous." https://lnkd.in/ew8gpGCZ However, the war seems to be over. In the wine business, the new EU rules prohibit the use of a term that evokes the name of a Geographical Indication (GI) of another Member State as a 'traditional term'. Prosek, the war is over. As of today, the new Regulation on Geographical Indications (GI) comes into force in all countries of the European Union, putting an end to the long-standing dispute over the Prosecco vs. Prosek case. The text was published on 23 April, 2024, in the Official Journal of the European Union and is now implementable. "No one will ever again be able to use as a 'traditional term' a term that evokes the name of a Geographical Indication (GI) of another Member State." Source: Mauro Pigozzo. Winemakers or rentiers? In reality, there shouldn't be an expansion of vineyard areas. Instead, the removal of the prohibition on planting Nebbiolo vineyards for Barolo and Barbaresco production on the cooler northern slopes is crucial. In the past, the vine struggled to ripen in these areas due to climate changes. However, today, with rising temperatures, Nebbiolo is yielding promising results. Conversely, the southern slopes, like many other regions in Italy, are facing challenges and could potentially be substituted (rather than added to) by the more favorable. However, the question remains legitimate. #barolo #winebusiness #wine

What are the physicochemical processes that accompany a Champagne tasting? Discover more about the essential role of the glass when tasting. This video extract was taken from Gérard Liger-Belair's lecture presented at the 18th edition of Enoforum (Vicenza, May 16-18, 2023) "Champagne: the mysteries of efferve-science" You can find the full recording at this link: https://lnkd.in/dWQf98i3
#champagne #effervescence #bubbles
