I love to bake, and when it comes to chocolate I use "the good stuff".... but it's been getting more and more expensive to do so. Climate issues, some bad situations, as well as the limited areas cacao can grow have made chocolate more expensive. Major supply chains for chocolate have been threatened globally. In comes science! This company in Israel has developed a method to cultivate cacao and can craft any number of features in it that they want. This is amazing news! By removing the need for a tropical environment you've also lowered growing risks and improved the sustainability as you can create the product locally versus large voyages around the world. Assuming this scales well and can be commercialized - My only caveat is that we must find ways to supplement / transition the many rural families and their communities that completely rely on this crop. Flooding the market with lower cost product would crash the price and would be devastating to them.
