SATPURA
This is very tasty and easy recipe for making Satpura. Satpura is a delicious, crispy, layered Sindhi snack. You can serve this as it is or with badam milk topped with some dry fruits.
Ingredients for Satpura
Plain flour - 2 cups
Rice flour - 1/4 cup
Salt to taste
Oil for deep frying
For applying in between the layers
1/4 cup ghee
3 tbsp flour

Method
Step -1
In a bowl combine flour, rice flour, salt and mix it well and knead into stiff dough with water.
Step - 2
Cover and rest for fifteen minutes:
Knead again, divide into four equal portions and roll into balls. In a bowl mix rice flour and one fourth cup of ghee.
Step - 3
Roll out each ball into a thin disc:
Apply rice flour paste all over. Roll up tightly and rest. Cut into small pieces. Press each lightly and roll with a rolling pin to make small poori.
Step - 4
Deep fry each Satpura:
As you fry you will notice the layers, open these lightly with the help of the fork. It has to be fried on a very low heat to make it crispy, taking care not to make it brown.
Step - 5
Drain the oil from the Satpuras and let them cool. Sprinkle sugar, cardamom powder and pistachio powder on top and serve. Enjoy.

THADRI:
Apart from Mitho Lolo many other dishes like Khatoo Bhaat, Satpura, Besan je Koki, Nankhatai, Potato Tuk, Sanha Pakora, Sai Bhaji, Mathoo, Dahi Boondi Raita, are prepared a day before and eaten cold on Thadri day..
Nowadays we have Salad Sandwich, Papri chaat, Bhel Poori, Gol Gappa - Pani Puri (potatoes boiled the day before), or any other food that was cooked the day before & can be eaten cold.
