Ravintola NOOA prepares for the busy summer season together with Kiilto. 🤝 This summer, the Tall Ships Races arriving in Turku is expected to bring about half a million visitors to the city. With the rise in customers, the staff size doubles, the dishwasher is in constant use, and orders for both raw materials and cleaning agents increase. This is beautiful! Main reason why I mostly order in. If you want to understand what reverberation means, think of sound as an object, because 'coloured speech' is actually a term. So would you like sound to be sharp, jagged around the edges, hostile sounding, or soft, wafty, gentle, fine-dining type calming? I have videos of lounges that I've stayed at for an hour or so at airports, where the gates seemed quieter - the sheer crowd for free food, the cutlery noise, and partitions built only for visual privacy with no thought for the peace and quiet that one associates with the word lounge. The cutlery noise was deafening, partly because the staff wasn't trained to be gentle with it. I'm not at liberty to share those videos because there's no way I could get people's faces out of it, unless I pointed to the floor, in which case the interior design couldn't have been captured. Maybe I'll find some time to video-edit the faces out. We've recently started micro-consults, where we provide quick, calculated advice as a one-time measure for retrofit spaces (considering the ever-increasing enquiries for these). This here is an excellent quickfix for what is really such a standard overlook these days.

In the autumn 2020, we bought Majstregården, or “Majstre”, as most people call the legendary restaurant on the southern tip of Gotland. With its seaside location, right next to Hoburgen, we knew that the place is one of the most popular destinations on the island, among both Gotlanders and mainlanders as well as visitors from other parts of the world. After 50 years in operation, however, the property was in poor condition and needed to be restored from the ground up. To broaden the target audience and attract new visitors – without losing regulars – the place needed a major facelift. The project became extensive, and the result was received with great enthusiasm. With the mission to bring Majstre into the 2020s, we also needed to develop the offer. In close collaboration with a renowned chef, we created a new menu focusing on modern food craftsmanship and inspiration from Gotland's pantry. Valuable advice from an experienced restaurant manager also helped us to develop guidelines for how to provide guests with a positive holistic experience. In June 2021 we were ready to open the doors to the newly decorated restaurant. The perception of Majstre changed quickly, especially among young couples and families with children. In the first year, we doubled the revenue compared to the year before we took over, and since 2021, the number of guests and turnover have increased year by year. When starting this project, we had no experience from the hospitality and restaurant business. Our experiences from marketing and brand development as well as food production and finance, were useful in creating the new Majstre. But he journey we embarked upon in 2020 was a one-way ticket to the unknown. Like getting on a roller coaster that takes off at top speed, not knowing how steep the hills will be or how big turns to expect ahead.
