Food, Arts, & Crafts 101: I had previously advised my home page profile pictures would be updated by the end of January. Due to a leg/ foot injury I have had limited mobility since January 20th, which makes running around craft stores in addition to restocking my kitchen pantry somewhat difficult. Thus, I have yet to orchestrate the menu finalizations, organizing, staging, and photographing TAP’s culinary food scarcity initiative: Autographed, custom bag, holiday sandwich creation, with sides. TAP is constantly rethinking its strategies, along with public outreach activities and budget constraints are the biggest challenge to date. How did I get hurt? Oh…an old recurring injury that haunts me, causing extreme pain in the feet joints, toes, heels/ foot bottoms, tendons, the Achilles heel (the believed culprit of everything); ankle and hamstrings. I had to stay dormant for about two weeks elevating my feet and legs as much as possible, while thinking, “Happy New Year, Pamela. Yay… whoopee!” Sarcasm. My profile page has yet to be updated because I spent most of my allocated budget for the above project on booze and pain-killers! Maybe I’m joking and maybe I’m not! Some other notes about this project. My focuses are food staples, budget-conscious eating, US brand recognition, and culinary creations that taste positively smashing! My theme inspirations are The Great Depression and imposed food rations and limitations on products like meat, cheese, and fresh vegetables. So watch me attempt to make canned meat and lime Jell-O with marsh mellows seem sophisticated and chic! Picture updates are coming soon but I have no ETA as of yet. Warmest Regards, Pamela R. SOUPS AND SAUCES. The best stock is based on RAW BONES, with vegetables such as carrot, onion and celery added for flavour. This is called MIREPOIX. Starchy vegetables such as potato or turnip would cloud the stock and some of the stronger vegetables such as swede and cauliflower affect the final flavour of the stock. Peppercorns are the invariable season together with bouquet garni. Salt is NEVER added to stock because as it reduces in volume during cooking the flavour becomes too strong. Cloves of garlic maybe added to veal stock. Lemon juice is usually added to fish stock. Both brown and white stocks maybe made from the same bones and vegetables but if brown stock is required they must be well roasted or fried until brown in colour. Fish stock differs from all other stocks in that only onions and parsley stalks are used instead of a traditional mirepoix. In cooking stock the most essential ingredients is PATIENCE. * Beef and veal stock should cook for 6 hours. * Chicken stock should cook for 2 hours. * Fish stock should cook for 20 minutes. The difference in cooking times reflects the size of the bones used. Once brought to the boil and skimmed, the stock can be left simmering to complete the cooking process except for the occasional extra skimming and topping up of cold water. On no account should the stock be left to boil as it will become cloudy and take in a stewed taste caused by the release of the calcium in the bones. Some stocks will gel when cold as a result of gelatine contained in the bones. Veal bones and some fish bones such as turbot and sole contain the most gelatine. ADVOCATE FOR FOOD SAFETY. THICKENING AGENTS FOR SOUPS AND SAUCES. * MODIFIED STARCH This is a prepared starch that can be whisked directly into simmering liquids to thicken them without forming any lumps. It is a convenient thickener that is colourless and flavourless, so that it can be used for both sweet and savoury items. This method can be used for fruit pie filling, made from canned fruits and and the juice thickened using the starch. Other uses are instant desserts and instant sauces to which boiling water is added These starch preparation are very useful for the caterer to keep for emergency use because they are very quick to prepare and keep well in a very air-tight containers. * LIAISON A mixture of cream and egg yolks at equal quantities is used for thickening and enriching some sauces, cream soups and white stews. The liquid should not be allowed to boil after the liaison has been added, as excessive heat will cause separation.
