📣 Little Kitchen Academy 📣 🍳 🍽 🔪
One of the many things I love about my work is learning about new franchise brands. And this week, I had the pleasure of diving into a brand that makes a difference in kids' lives by teaching them practical life skills - cooking skills!
My guest, Joel Lazarovitz, shares how Little Kitchen Academy is a "Montessori-inspired culinary academy that allows children to build independence or confidence, really their creativity, by participating in culinary programs, by learning practical life skills. But the truth of the matter is what we're trying to do is teach independence in kids with a Montessori-inspired approach to teaching." This emphasis on independence sets Little Kitchen Academy apart from other culinary academies for kids.
One of the highlights of the discussion is Little Kitchen Academy's brand partnerships. Joel reveals that the academy has joined forces with two well-known brands, BIRKENSTOCK and Chef Works.
Joel shares, "Birkenstock gifts the Birkenstock Wall to franchisees where kids can hang their chef coats and use their Birkenstock shoes for class." This collaboration enhances the children's experience and showcases Little Kitchen Academy's commitment to providing quality resources and fostering a supportive learning environment.
What an incredible brand gaining traction across the US and Canada, offering single-unit, multi-unit, and area development opportunities. You can tune in to the podcast to learn more!

Des Gunewardena, formerly one half of restaurant group D&D, has spoken for the first time about his acrimonious 2022 departure from the company he founded 18 years ago.
Great scoop from Steve Dinneen on today's front page!
Speaking to City A.M. in an exclusive interview he said: “I had no option [but to leave]. There was a pretty fundamental difference of views between the guy who founded the business [him] and the financial stakeholders."
“I had one vision for how to develop the company and the private equity investors had a different vision. My strategy was to continue to practise the things that have been so successful since D&D was formed… In the short term, you have to manage the business as well as you can. And in the long term you continue to stick to your vision: long-term players, long-term growth. That was my strategy. Theirs was more focused on the short term.”
A lot of restaurant owners don't have their processes put on paper, so employees end up guessing on what the right thing is to do.
This is not the way to build a business that is ready to scale.
Instead, put your practices down on paper. With proper training, you can get your team up to be almost as efficient as you over time which frees you up to do the most important things in the business.

Capital has the power to unlock culinary creativity and empower employees - a critical lesson that Joshua Sharkey has embraced with his tenure at Bark Hot Dogs.
"The less capital you have, the more you're forced to make short-term decisions, and those short-term decisions always impact your employees."
With ample capital, thoughtful decision-making is front and center - all for the benefit of the restaurant and its employees.
