Easy peasy reciepes for the time poor individual: Chilli Corn Carne 😋 1 tbsp olive oil 2 large onions, finely chopped 3 garlic cloves, crushed 1 pack of store bought taco mix 500g x lean beef mince 400g x tin chopped tomatoes 250ml x beef stock 400g x tin red kidney beans, rinsed and drained. Method: Heat the oil in a large sauté pan over a medium-high heat and add the onions. Cook for 10 minutes, stirring often, until softened and translucent. Add the garlic and fry, stirring, for 2 minutes more until fragrant. Add beef to the pan and season with salt and pepper. Once beef is browned then tip the juices from the pan and discard. Continue cooking and stirring the beef, add taco seasoning and tin tomatoes. Bring to a simmer, stirring occasionally until beef is cooked through. Add the kidney beans and cook for another 5 minutes, season with salt and pepper. 🥦 ZERO WASTE WEEK 🥦 -- Broccoli Leaf Pesto -- 🥕 250g broccoli leaves 🥑 25g basil leaves 🍆 6 x garlic cloves 🥦 60g pine nuts 🌶️ 60g parmesan cheese 🌽 100ml olive oil, salt & pepper -- Method -- - Blanch the broccoli leaves in boiling water for a minute, then transfer them to ice water to cool. - Drain the leaves and pat them dry. Wiktoria recommends we make "Bigos" in January. It's a hearty Polish "Hunter's Stew" that's easy to make. This recipe serves 4: 1kg sauerkraut (roughly chopped), 25g dried mushrooms (sliced), three bay leaves, salt, pepper and dried juniper to season. 150g smoked bacon (chopped), 200g beef shoulder (cut into small chunks), 500g smoked sausage (sliced), one medium sized onion (chopped), 50g prunes (halved), and a large glass of good quality red wine. Combine the sauerkraut, mushrooms, bay leaves and seasoning in a large pan with 200ml of water, cook on low heat until soft, stirring regularly. Fry the meats and onion in a frying pan with a knob of butter until golden, then add to the sauerkraut mixture and mix well. Cook on low heat for an hour. Finally, add the prunes, wine and add further seasoning, if required, and cook on low heat for a further 10 minutes before serving with thick-cut bread and butter or creamy mashed potato. #bigos #polishmeal #huntersstew #recipe
