I loved reading Mike Lee's magazine / book on the future of Food. No, it is not a trend report and no, Mike does not pretend to be able to predict the future of food. What he does instead is describe four fascinating possible futures of food. His four stories about what the future might bring (regenerative dystopia; the green revolution redux; a new superpower and the nutrition stack) are truly captivating and truly fun to read. A must read for those interested in what the future of food might bring us! What is Mise? Mise is short for “mise en place,” the French culinary term that means “everything in its place.” Colloquially, in America, cooks must have their “meez” ready in advance of a restaurant’s service period. It’s about having stocks made, proteins prepped, and vegetables pre-cut. Lack of preparedness in the kitchen can lead to disaster once things get busy. In the context of this book, Mise is a metaphor that can be applied to the broader food and agriculture industry: foresight and planning for the future are essential to survive and thrive.
