This is one of the most delicious foods. It is because my grandma used to make it and its basically mashed potato mixed with flour and deep fried. This weekend, I delved into the world of nose-to-tail cooking with the incredible Hannah Gongola at H2Grow. It's truly remarkable how nose-to-tail eating ensures that every part of the animal becomes a valuable element of the menu, preventing waste and offering a plethora of nutritional benefits. Recipe: Tacos de Lengua I was surprised how the ominous looking whole cow tongue quickly transformed into the delicious shreds we found on our tacos. It tasted quite a bit like pot roast, and the texture was similar to lion’s mane mushrooms. Simmer the tongue: 1 3-4 lb beef tongue 2 large onions, peeled 1 head of garlic, cloves separated 6 to 7 bay leaves 1 tbsp peppercorns 2 tbsp salt 1. Fill a large stock pot two-thirds full with water or stock. 2. Add the tongue, onions, crushed garlic cloves, bay leaves, peppercorns, and salt. 3. Bring to a boil, reduce to a simmer, cover, and cook for 3 hours until the tongue is soft and tender. 4. Remove tongue from pot and allow it to cool. Reserve liquid for any sauce you might be making (optional). 5. Peel tongue with fingers or a knife. Shred the meat, season to taste, and serve on your favorite tortilla. Pro tips from the class: Use lard to fry up the tortillas; it's rich in essential fats. Invest in a tortilla press for perfectly shaped tortillas. For every 123g of masa, you'll have enough dough for 8-10 tortillas. Hannah also shared insights from a class she took at Barton Springs Mill on nixtamalization, a traditional process that enhances the nutritional value of corn or grains. We used the most flavorful masa from Masienda and let me tell you, the difference was extraordinary!
