Chickpea and spinach curry - food is medicine
Focusing on economical meals and clearing out my pantry for Frugal February 😅 but this is a dish I could eat any time! Chickpeas are delicious and nutritious with 1 cup having 14.5g of protein, and encourages your gut bacteria to make a short-chain fatty acid called butyrate. In studies, butyrate is shown to help get rid of sick and dying cells and may lower your risk for colorectal cancer. Chickpeas have other cancer-fighting compounds, too, including lycopene and saponins. And of course spinach, tomatoes, garlic, onions and turmeric contribute to this powerhouse of anti-cancerous dish.
To make: Sautee an onion and some garlic in olive oil (or coconut oil for flavor), add 1 tablespoon garam masala, 2 teaspoon coriander, 1½ teaspoon turmeric and 1 tsp cumin. Add crushed tomatoes, coconut milk (I didn't have any so just the oil gave it the coconut flavor), cooked chickpeas and vegetable stock/broth to cover. Simmer for 20 minutes, adding chopped spinach at the end just until wilted.
