At Expo West this year, the proliferation of dates in snacks, desserts and more represented the ongoing shift toward less refined sugar and more whole food sweeteners in packaged food and beverage products. But the more significant trend is about rewiring both consumers' palates and their expectations of how food should taste, opening up a world of unexpected flavors. Bitter! Sour!
