Dining aficionados or those catching up on season 3 of “The Bear” may be interested in my latest Econlog article: https://lnkd.in/efgnnkVd I discuss the market for table reservations at high-demand restaurants. Specifically, my essay follows up on a intriguing story by Adam Iscoe for the New Yorker on how third-party “hustlers” and “mercenaries” are arbitraging table reservations at high demand restaurants: https://lnkd.in/e4PXAtPc My contribution is to add a little economics to the discussion. Economic forces can compel us to act in ways the implications of which we little understand.

Fine dining will never disappear from Hong Kong's landscape, but a new approach is needed to play the long game. At 1880 Hong Kong, we have some exciting fine dining announcements to come soon, promising new culinary experiences that reflect the dynamic and evolving not only in Asia, but globally. Here are 3 ways to optimize a fine dining restaurant without losing its roots: 1. Menu Innovation. À la carte and multi-course tasting menus will always remain on the table, but we also need to create space for lunch or dinner set menus, or even happy hour, which are more affordable and can serve as an introduction to your restaurant concept. 2. Operational Efficiency. Now is the time to ask the question if 15-step cooking processes or a large inventory are needed. By operating more efficiently, costs can be reduced, allowing for more competitive pricing without compromising the overall dining experience. 3. Collaborations. This article says it all - everyone in Hong Kong is facing the same challenges. Why don’t we come together to solve it? More than ever, our industry needs to focus on partnerships with local suppliers, artisans, or other establishments to showcase unique and affordable offerings. This can create buzz, attract new guests, and provide a platform for showcasing culinary creativity in a more accessible format. Striking this balance between high-end product and flexibility will be a strong reply to changing consumer demands and the competitive dining landscape. #hongkong #finedining
