Automation is the future of many industries, but its infusion into the fast-casual food sector is something to particularly keep an eye on. sweetgreen made headlines on WSJ by opening its first restaurant staffed partly by a proprietary salad-making robot. This is not just a small random change; it’s a step toward the realization of an important vision: reimagination of the restaurant workspace. Here are some takeaways: 1️⃣ Efficiency: The robots allow a significant operational leap, drastically cutting the time to prepare a salad. However, scalability and cost-effectiveness in the long term remain questions to be answered. 2️⃣ Human role: the human-machine synergy Sweetgreen has engineered is an excellent example of what the future of work could look like.
