Hello everyone, In our continued coverage around the history of flavor and flavor extracts, we wanted to shed light on the history of almond extract. Like vanilla extract, almond extract is made by separating the oils from almonds and putting them in an alcoholic base. Interestingly enough, almond extract is far more potent in flavor than vanilla extract. According to Cookist, this is because almond extract is made from "bitter almonds, but also from the kernels of peaches and apricots (known as drupes). Benzaldehyde is present in these kernels as well and gives almond extract it's distinct strong almond flavoring." Cooks can prevent this ingredient from overpowering a dish by using it sparingly in baked goods. Artichoke Sour (Mịn) Artichoke is known as a symbol of Da Lat, representing a cutting-edge agricultural product and chosen as the architectural motif of buildings right at Da Lat's central square. Artichoke possesses unique beauty, a delicious flavor, and high health benefits. Therefore, there are numerous medicinal products made from Artichoke such as tea and extract. Additionally, Artichoke is used in local cuisine, notably in the famous Atiso Pho dish. Based on the health benefits and herbal flavor of Artichoke, I chose to use Gin infused with Pandan leaves as the base (since during testing, I felt a complementary flavor profile between pandan leaves and Artichoke). I combined other precious herbal ingredients such as saffron tincture and rhubarb syrup. I added a touch of whole grain mustard and dill to add diversity to the drink. Furthermore, I used yogurt and egg whites to create a smooth, light creaminess and added freshness to the drink. Especially, egg white can also help to combine all the curds that appear when acid interacts with fat, which gives a better looking drink. To finish, I balance the sweet and sour with lemon juice. balancing the sweet and sour with lemon juice. I named my creation 'Mịn' which means smooth, not only referring to the texture of the drink but also to the health and nutritional value it provides. Through this, I also aim to convey a message that "Alcohol or cocktails can also bring health, nutrition, and spirit if consumed responsibly and in moderation." SYRUP & CORDIAL SERIES: ROSEMARY & HIBISCUS CORDIAL 500ML Ingredients: 15g Hibiscus 2 Large Rosemary Sprigs 250g Sugar 400ml Water 3g Citric Acid 1.5g Malic Acid Method: • Add 15g of Hibiscus & 2 Large Rosemary Sprigs into 400ml of Water. Stir continuously and then take off heat once the mixture begins to boil. • Add 250g of Sugar and return the mixture to a low heat and stir until the sugar has fully dissolved. • Strain and allow the mixture to cool. • Add 3g of Citric Acid and 1.5g of Malic Acid to the mixture and stir until acids are fully dissolved. • Bottle mixture and enjoy! My first original Cordial Recipe that I created! I've made many Cordials over the last couple of years but always wanted to start experimenting with flavours in a way that would bring acidity and volume to my cocktails. I recently had this idea for a floral and herbal cocktail which would be supported with tropical notes of Hendrick's Amazonia So naturally I picked the ingredients I had laying around. At first Rosemary & Hibiscus didn't come to mind as a flavour pairing but I thought it would be interesting! I was pleasantly surprised to have found it was very balanced even for attempting it without any guidance. The Cordial is a heavy aroma of Rosemary which allows intense herbalness yet was quite floral. Supported by the balance of herbal Hibiscus that came with a touch of sweetness. Then balanced with the acidic qualities of the acids, it was a well rounded yet absolutely delicious!
