One wellcare team used bamboo to make cutlery, including bowls, chopsticks, plates, mugs, and pots, from cutting bamboo culms to size and shape, engraving, sanding, and cleaning each piece. The other team took on the task of creating a fire. They skillfully arranged the tinder in the center of the fire bed, forming a teepee structure with small sticks and twigs. A gap was left to add the cotton pads and a few pieces of recycled paper, soaked in oil, to ignite the fire. Once the fire was ready, we collectively prepared a meal in the bamboo pot, taking full advantage of the campfire. We also made bannock on a stick, immersing ourselves in the experience of early humans hunting and cooking in the wild. 'Dieback is conical'.. Something I never knew but learned from the brilliant Dave Morris, of Ancre Hill Vineyard in Wales, who guides the #biodynamic practice at Winding Wood and joined us for pruning last month. Winter pruning is one of the most important moments in a vineyard. Every cut affects not only the coming year, but also the years ahead. Working to a 3-year plan with a pair of secateurs takes some concentration! Choosing the best cane for fruiting, creating spurs in the right place for year 2, and at Winding Wood, moving from double to single guyot over a period of seasons. Pruning for 'controlled dieback' to reduce the height and spread of the vine (thereby improving sap flow and fruitfulness) involves considered, measured cuts that allow the vine to reroute its energy into living wood. This 'gentle pruning' technique is gaining traction in #organicwines and #sustainable vineyards across the world. Proper pruning is time consuming, labour intensive, mentally complex work that often gets delegated (necessarily) to hired workforce groups. In larger vineyards, working on speed rather than spec is sometimes the only choice but it serves as further kudos to Winding Wood that every vine is nutured in this way. Time (and weather!) will tell how it plays out in the wines of the future, but one thing is certain; exceptional wines are borne of exceptional vineyards, and Winding Wood already delivers on both. #biodiversity #englishwine #pruning #vineyards #ecology #ecosystemrestoration

FROM ESTATE TO PLATE. With a 326 acres estate and a rich history of being the wealthy family Marqués de la Torre´s pantry in foregone centuries, it made all the sense to celebrate our 10 year anniversary with the project "Vegetable Garden & Tree Regeneration". Throughout the summer, our guests have been enjoying luxuries such as tomatoes, egg plants (lots of them) and green peppers grown directly in the Castell Estate cutting out intermediates and transport time and giving our culinary team prime materia to deliver the "Best from our Mediterranean Estate to your Plate". Gardening is hard, unpredictable and time-consuming and we are now so much more respectful of our ancestors and what they achieved under more difficult circumstances. We are also fully appreciating our amazing collaboration with the agricultural team at the local charity Esment. Without their help, knowledge and expertise it would not have been possible already in year 1 to achieve (in between other): 40 kg of peppers various sorts 96 kg of eggplants 110 kg of tomatoes various sorts 800 kg of lemons 123 litres of olive oil In a recent article from the local newspaper Mallorca Zeitung´s gastro journalist Martina Zender speaks to a number of local chefs including our Sa Clastra gourmet chef Jordi Cantó about growing their own produce for their restaurants. Jordi says: "It is a wonderful feeling to develop dishes with your own product. And we can work even more individually. For example, we use different varieties of tomatoes and peppers depending on the dish". We will continue to honour our heritage with the the "ESTATE TO PLATE" concept in years to come.
