I often receive requests to provide a recommendation for a Holiday wine or spirit. For example, what wine do you recommend to pair with Turkey dinner? Do you recommend red or white wine? Or what spirit or cocktail do you recommend for a Holiday cheer? All very good and common questions. When selecting a wine for Thanksgiving Day, I consider a wine varietal that will not overpower the turkey yet compliment the stuffing and other fixings, such as sweet potatoes, and cranberries. Accordingly, I recommend a medium-bodied red or a full-bodied white wine. For a medium-bodied red wine, either Pinot Noir or Beaujolais (Gamay grape). I find that Pinot Noir or Beaujolais’ low-to-medium tannins and higher acidity with tart red fruit, light earthy or “woodsy” notes pair well with the spices included in the fixings with your Holiday feast. All the while, these wines will not over-power the main course of turkey. The rationale is mostly attributed to the low-fat content of turkey combined with the low-to-medium tannins. The traditional full-bodied red wines, such as Cabernet Sauvignon or Bordeaux blends have relatively high tannin levels that result in tannins having a bitter taste, which over-power the turkey. If your preference is white over red wine, then I recommend a full-bodied white wine. Such as Chardonnay. I find that the oaky richness from Chardonnay combined with the sweet spice notes and creaminess can offset some of the dryness that can accompany a roasted turkey. The appropriate level of acidity offered by Chardonnay can often balance the flavors from the variety of fixings that accompany the main course. Riesling is made in a range of styles from Dry to Sweet and low-to-medium bodied with high acidity. Depending on your preference in wine, Riesling is a good option for a white wine that pairs well with a traditional turkey dinner. The dry and bright acidity balances the sweetness of the fixings. Alternatively, a sweet-styled Riesling can balance any spicey dishes offered with a turkey dinner. Generally, the aromatics and taste on your palate are similar, with notes of apple, apricot, peach, and pear with floral and honey undertones. What Spirit or cocktail do you recommend for the Holidays? I suggest a few of my favorite holiday cocktails: Spiced Pumkin 2 oz pumpkin ale, 1 oz bourbon, ½ oz amaretto, ½ oz agave nectar, 1 tsp pumpkin butter, 1 whole egg with freshly grated nutmeg Maple Old Fashioned 2 oz dark rum, ½ oz maple syrup, 2 dashes Angostura bitters, garnished with an orange twist Chocolate Peppermint Martini 3 oz chocolate liquor, 3 oz peppermint vodka, 5 oz light cream (or half & half), 1 tsp cocoa powder, 1 tbs chocolate syrup. For a nice touch, coat the inside of the martini glass in chocolate with crushed peppermint on the rim of the glass. Treasured for its intense floral aromas, Gewürztraminer has thrived for centuries in the foothills of the Alps and the Vosges Mountains. Whilst sweet smelling, many are dry and even display a savory side with age. On the nose: Gewürztraminer has a distinctive lychee and rose aroma. You can also find ginger, orange blossom, honey delicate spiced notes, depending on whether or not the grapes have undergone noble rot. On the palate: Gewürztraminer tends to be full bodied, sometimes viscous and oily, and can have higher levels of alcohol, as it ripens quickly. The acidity levels range from moderate to low, but the best examples always taste fresh and balanced. Depending on the style, wines may be dry all the way to sweet. Welcome to an authentic tequila tasting! 🥃🌵 I am your tequila master and I will take you through a sensory journey that will allow you to appreciate the magic of tequila. 🇲🇽👃👅 #TequilaTasting #TequilaTasting #TasteMexico. Step 1: The Preparation First, we must prepare the right environment. Find a quiet place, without strong smells and use tall and narrow shaped tequila glasses. Make sure they are clean and dry. Step 2: Visual Observation Pour the tequila into the glass and observe its appearance. Note its color, which can range from a pale golden to a deep amber. The viscosity or "tears" that form in the glass when the tequila is shaken is also important. These indicate the quality and texture of the tequila. Step 3: Smell Bring the glass to your nose and smell the tequila. Aromas can be fruity, floral, herbal or spicy. Identify the hints of agave, citrus, vanilla and other complex smells you can perceive. Step 4: Tasting Now comes the most exciting moment: tasting the tequila. Take a small sip and allow the liquid to spread through your mouth. Taste the initial, middle and final flavors. Look for notes of cooked agave, caramel, pepper, fruits and spices. Step 5: Finish Watch how the tequila slides down your throat and pay attention to its finish. Is it smooth and silky or spicy and bracing? How long the flavor lingers on your palate is an indicator of quality. Step 6: Reflection After tasting, take notes on your observations: What did you think of the tequila, what aromas and flavors did you enjoy the most? This will help you remember your preferences in the future. Step 7: Comparison If you have several brands or types of tequila, compare them to appreciate the differences between them. Each has its own character and personality. That's it! Every Gin should have a signature cocktail. This is ours - The Spiced French 75🍸 Named after the French 75mm light field Gun, widely regarded as the first modern artillery piece - this cocktail certainly is an explosion of flavour!💥 We tasked mixology expert Suze (Gourmetglow) with finding an elegant serve which complemented the botanicals in our Gin & boy did she hit the bullseye 🎯 Ingredients: 30ml Shroton Fair Gin 10ml Lemon Juice 10ml Grapefruit Juice 10ml Spiced Syrup Champagne to top up Ice to shake Lemon Twist to garnish Spiced Syrup Recipe: 100g Caster Sugar 100ml Water 1tsp Grains of Paradise 2 Dried Juniper Berries 5 Coriander Seeds 3cm Fresh Ginger Root, roughly chopped 1 strip Lemon Zest 1 Strip Grapefruit Zest Method: 1. Begin with the sugar syrup. Add the water, sugar and spices to a small pan and set over a low/medium heat to dissolve the sugar. Once dissolved, increase the heat and boil for 3-5 minutes or until syrupy. Remove from the heat and add the citrus peel. Allow to cool to room temperature. 2. Once cool, strain through a muslin cloth into a sterile bottle and store in the fridge. Pop A Champagne Flute in the freezer to chill. 3. When ready, add the gin, citrus juices and syrup to a Boston shaker and shake for 15-20 seconds, or until the sides of the shaker feel cool, Strain from a height into a chilled champagne flute to aerate the mixture. 4. Top up with champagne, and give a gentle stir with a bar spoon, garnish with a lemon twist and serve immediately. The perfect aperitif this Summer🍸
