“How you do anything is how you do everything.” - Katie Bernstein’s dad This quote was featured on a Stumptown Coffee Roasters video that I used to show prospective customers. I must’ve heard it at least 100 times and it’s become a part of my regular mantra in life. These beans that were pulled out of a retail bag of coffee from an independent roaster that I will not name made me think of why Stumptown selected that quote for their video. I imagine that whomever was roasting, blending, or bagging this coffee just assumed it was another 5 beans in a bag of many others and no one would know or care about them. Unfortunately the cup quality suffered from that assumption and I have to imagine they must know this is what their blends look & taste like. Aiming for quality means bringing rigor into the smallest aspects of your process. When corners are cut or the attitude is “it’s all fine cuz who cares?! No one will notice.” We’ve already missed the mark. Let’s keep the special in specialty coffee. It matters to our customers and the longevity of our community. What do you think? Yeee-HAW! I love coffee. Cowboy coffee is a method of brewing coffee that was commonly used by cowboys and pioneers in the Old West. It is best to start with ground coffee and water. The traditional ratio is 1-3 tablespoons of ground coffee per cup of water. Bring the water to a boil in a pot or kettle over a campfire or stove. Once boiling, take it off the heat and stir in the ground coffee. Let sit for 2-4 minutes to steep. After steeping, the grounds will sink to the bottom of the pot. To serve, carefully pour the coffee into cups or mugs, being careful not to pour in the grounds. No coffee filter is used, allowing some fine grounds to get into the coffee. This gives it a strong, rich flavor. The coffee is boiled, so it will be quite strong and bitter compared to modern brewing methods. Settling time is important. If it is too short, the coffee will be sludgy. If it is too long, the flavor will be weak. Ground coffee is ideal, as it dissolves more quickly in the boil. If only whole beans are available, crushing them with a rock or hammer helps speed extraction. Sweeteners like sugar or molasses are commonly added to balance the bitter taste. The method originated out of necessity on the trail, but some still enjoy the hearty, rustic flavor of cowboy coffee today. I generally prefer pour overs. Hahahahaha
