Thanks for posting David! Isabelli Partners has been working with Katherine & Brandon Rushing, owners of Briny Swine Smokehouse & Oyster Bar developing the concept for over a year now. No restaurant opening is easy. Not for anyone. Even the “best” struggle. If an owner operator says it is easy, they are lying. We have consulted and advised over 400 hospitality clients and Briny Swine Smokehouse is around our 180th restaurant opening. This is an insane business with minimal profit margins. Once we switched our GC & Designer to Matt Fisher (Alpana Singh’s business partner in ALPANA) we finished on time and under budget and the place looks great. It’s all about choosing the right local partners who have real experience and know the market. Often when out of town operators go to market regardless of success in other markets they make costly mistakes. The city of Chicago actually doesn’t make it hard compared to other cities. If you know you know and most operators in Chicago don’t know. “Chicago is the City that Works”. When an opening is a off the Chicago operators often blame the city and the permit process. I can tell you that that is rarely why a restaurant opening in Chicago is delayed. The real reason is usually operators planning, changing direction, indecision and not passing inspections. A liquor liscene in Chicago is $4,400.00 every two years. A liquor liscense in Miami is $400K + now. I admire Brandon and Katherine for not blaming the city of Chicago!
